CRÉMANT DE LOIRE – « Divine Idylle »

 

Cépages : 50% Chardonnay et 50% Pinot Noir.
Terroirs : Schisteux et argilo-schisteux.
Elaboration : « Divine Idylle » est un Crémant de Loire élaboré en méthode ancestrale. Ce qui le différencie d’un Crémant classique : le ramassage à maturité optimum du raisin qui permet lors de l’élevage de ne pas ajouter de sucre. Après les vendanges, on ne garde que les premiers jus qui subissent une double-fermentation, en double-barrique pour le Chardonnay et en cuve pour le Pinot. Celui-ci est ensuite refroidi et filtré pour garder les sucres suffisants pour la deuxième fermentation en bouteille. Après dégorgement, le Crémant est très légèrement dosé avec un vieux millésime de Coteaux du Layon issu du Château.
Découverte sensorielle : Discret et élégant, le nez développe des notes rayonnantes de noisette, d’amande, de pain grillé, de fruits confits et d’épices légères. « Divine Idylle » est un vin mature aux arômes nets et gouleyants. Ses bulles fines donnent un relief tout en délicatesse. La bouche est vineuse, le chardonnay apporte sa finesse et sa fraîcheur, le pinot noir sa rondeur et son corps, on retrouve le fruité du nez à l’évolution. La finale est longue, fraîche et agréable.
Accord mets et vin : Servi à une température de 10 à 12°c, ce crémant de gastronomie pourra être dégusté à l’apéritif mais aussi à table. A essayer sur des sablés au Parmesan, des noix de Saint-Jacques poêlées au céleri rave, un foie gras confit et poché avec un chutney de navets. Avec quelques années de vieillissement, il se mariera merveilleusement avec une poularde farcie aux truffes.
Cremant de Loire-Divine Idylle
Grape varieties : Chardonnay 50% and Pinot Noir 50%.
Soil : Schist and schistose clay.
Production technical data : « Divine Idylle » is made to a traditional old method. What distinguishes it from a classic Crémant is that the grapes are picked at an optimal level of maturity which enables the wine to be aged without the addition of sugar. After the harvest, we only keep the first juices, which undergo double fermentation, the Chardonany in double-barrel and the Pinot in vat. The wine is then cooled and filtered to retain enough sugar for the second fermentation in bottle. After disgorging, the Crémant is lightly dosed with an old vintage Coteaux du Layon from the Château. Only 1,500 bottles were produced in the first year.
Tasting notes : Discreet and elegant, the nose develops radiating notes of hazelnuts, almonds, toast, candied fruit and light spices. «Divine Idylle » is a mature sparkling wine with distinct, fruity aromas. Its fine bubbles give it a delicate lift. It is vinous on the palate, with the Chardonnay adding finesse and freshness and the Pinot Noir, smoothness and body. The fruit on the nose comes through again on the palate as it evolves. The finish is long, fresh and pleasant.
Serving advice and food recommendations : Served at a temperature of 10-12°C, this gastronomic Crémant can be enjoyed as an aperitif, but also goes well with food. Try it with Parmesan cheese straws, pan-fried sea scallops with celeriac, or poached confited foie gras, served with turnip chutney. After a few years ageing, it will pair beautifully with fattened hen stuffed with truffles.
